A Very Jersey Monday

Last night Alexis and I got together to, once again, pay tribute to the genius that is The Real Housewives of New Jersey.  If you’re not watching that show yet, you’re really missing out.  It’s like a real-life Italian soap opera.

Anyway, for last nights gathering I decided to whip up some tabbouleh and mojitos.  I bought some fresh mint last week, so I decided to run with it for both the appetizer and the drink.

Here’s the spread:

Healthy and refreshing — perfect for Monday night with the Jersey girls.

Let’s start with the tabbouleh.  I made this pretty much the same way I did last time, just tweaking a few things this time around.

I poured 1 1/4 cups of boiling water over 1/2 cup cracked wheat (also called bulgar wheat) in a glass bowl. I covered the bowl with a plate and let the mix sit for 30-45 minutes while I made the rest of the dish (plus some yogurt sauce and some hard boiled eggs…). While the wheat was cooking, I chopped up 1/2 an English cucumber, 1/4 of a red onion, a red bell pepper, a pint of grape tomatoes, a big handful of spinach, and a chicken breast I roasted in the oven (olive oil, salt, and pepper, then cook 30-35 min at 350°). All this was later tossed with the wheat along with the juice of one lemon, a drizzle of olive oil, some minced fresh mint, and some salt and pepper.

If you’re looking for more of a kick in this dish, try adding some red wine vinegar, some hot sauce, or some dried oregano.

I made this earlier in the day, so the tabbouleh was able to sit for an hour or two before Alexis came over.  Remember: the longer this dish sits, the better the flavor.

I served this with some mini pitas and hummus I bought at TJ’s, plus some of that yogurt dip I can’t get enough of.

I made the yogurt dip the usual way (8oz Fage 2% Greek yogurt mixed with the juice of 1/2 a lemon, 1/2 tbsp. white wine vinegar, a minced clove of garlic, salt, pepper, a few julienned mint leaves, and 1/2 a grated cucumber with the excess water squeezed out).

You can make this whole spread vegetarian by omitting the chicken.  If you’re vegan, cut out the yogurt dip as well (or use Soy yogurt).  If you’re gluten-free, you can use quinoa instead of bulgar in the tabbouleh.  As for the pita bread, I don’t know if they make that G-free or not…

Just a note: this probably isn’t the best spread if you’re on a first date with someone.  The tabbouleh + pita + hummus + yogurt dip tends to be a bit messy, not to mention the garlic breath the hummus gives you…  Doesn’t exactly scream “let’s make out!” when you’ve got bulgar on your shirt and yogurt sauce smeared across your face.  (Don’t worry, I still think you look good.)

So perhaps some of you are not feeling the at-home happy hour.  I know that some recipes call for a lot of ingredients, and it certainly would be easier to just run out to the bar and order something.  However, this drink is about as easy as it gets (not to mention, pretty cheap to make).

To make these, I squeezed the juice of one lime into a glass, added 1 tsp. sugar, and 4 mint leaves.  I muddled this (basically, I took a spoon and mashed everything around a bit), then added ice, a shot of vodka (because I don’t drink rum), and topped it off with sparkling water.  Easy right?  You can use rum, vodka, or gin in these (I think rum is traditional, though).

These are really refreshing and delicious.  Perfect for a warm May night.  Or a rainy May evening… Whatever, California weather.

Another fun fact about making your own cocktails: because you can control what’s going into your drink, you control the calorie content.  KC came home with a pack of Bud Light last night and promptly waved off my offer to make him a mojito (“Not healthy enough,” he says).  I told him I bet my drink had less calories than his Bud Light, so onto Google we went.  Lo and behold, I was the winner.  A can of Bud Light has 116 calories.  My mojito had only 80 calories.  (50 calories in a shot of vodka, 15 calories in a tsp. sugar, and 15 calories in one lime).

Happy hour reigns victorious!

Keep in mind though, that mojito you’re ordering at the bar probably has way more calories than that (more sugar, pre-sweetened lime juice…who knows).

Unlike the tabbouleh, these drinks would be perfect for a date.  Not too heavy, plus all the mint and lime leaves you perfectly kissable.  So whip up a mojito and start practicing your pick up lines!

A Mother’s Day Feast

I hope you all had a nice weekend (with your moms!)  KC and I headed down to San Jose on Saturday for a Mother’s Day dinner put together by Alexis and yours truly.

Before leaving Oakland, KC and I walked to Piedmont Avenue and had breakfast at La Farine, my new favorite hangout.  KC and I each ordered coffees (they were super hot and super dark — my top two priorities when it comes to coffee).  KC had a chocolate croissant; I opted for another petit pain (like I said, bread is my vice), this time I got the seeded loaf which had sesame seeds, poppy seeds, and fennel seeds on it.  Y-U-M.

Oh yeah, I also had some fizzy water.  Because we all know how I feel about bubbles…

This breakfast reminded me of Europe.  Alexis and I have traveled abroad quite a bit together, and we used to go sit at cafes and have coffee and snacks almost everyday when we were traveling.  Oh Paris, Rome, Austria… how I miss you.

Ok, enough reminiscing.

Alexis and I had asked my mom what she wanted for dinner for Mother’s Day.  The only thing she told us was to make fish and to make the dinner “spring themed.”  Very nice.  Very vague.

All in all, I think Alexis and I both did a fabulous job making a spring meal.  Look at us, hard at work:

I was in charge of appetizers and cocktails (guess why!).  I made two appetizers (both repeats — sorry!) and one cocktail.  For the first appetizer, I made green goddess dressing and served it with spring vegetables.

Springy, yes?  I chopped up two heirloom tomatoes, half an English cucumber, some radishes, and some heirloom carrots.  Fresh and delicious — perfect for a spring gathering!  Also, this dish is gluten-free and vegetarian (not vegan though, sorry!) so it’s great even if you’re dealing with limiting diets.

For the second appetizer, I made crostini with ricotta, peas, mint, and prosciutto, which I made last week for New Jersey night.  Alexis and I both thought it was so delicious we should share it with Mom.

So yummy!  Really, these are super easy to make and really tasty.  I would recommend using whole milk ricotta for these, though — I used part skim this time (that’s what was in the fridge), and it’s a little dryer than whole milk kind.

Ok, so the highlight of the whole pre-dinner merriment was really the cocktail.  I made a drink called The Cuke, which basically tastes like spring in a glass.  Delicious!  I found the recipe here and adapted it.

To make these, I sliced 3 limes and 1 1/2 English cucumbers and added everything to a pitcher, along with the juice of 2 limes, 1/2 cup of sugar, and a big bunch of mint.  Everything was muddled together (I just used a wooden spoon), then I added 2 cups of gin (Bombay Sapphire, because my parents are fancy).  All this went into the fridge to steep together for 30 minutes.  After 30 minutes, I poured the mix over ice and topped with sparkling water.  Seriously delicious.

These drinks are super refreshing; and the mix just gets better the longer it steeps in the fridge, so it would be great for a party since you can make the base ahead of time and just let it hang out.

Alexis tackled dinner and dessert; and, as usual, everything was delicious.

She made grilled halibut served over spring vegetables; garlic shrimp; roasted asparagus; and a spring salad with oranges, avocado, almonds, and all sorts of other goodies.

For dessert she made a cream cheese pound cake with a strawberry coulis:

I’m not that big on cake, but I could have eaten like half this thing in one sitting.  Thank goodness I don’t have the leftovers at my apartment — that would just be a recipe for disaster.

Alright, well I have to get ready for New Jersey tonight (very important!).  More cocktails and appetizers later!

Pizza Party

How was your Friday night?  Fun?  Mine was F-U-N.

Alexis had made some pizza dough from scratch yesterday morning, and was nice enough to bring some over in the afternoon for our Friday happy hour.  Do-it-yourself pizza is a great way to use up whatever you have lying around in the pantry or fridge (perfect for the end of the week, yes?).

Alexis and I scrounged the fridge and came up with a game plan for our pizzas.  We decided to make three pies, so Alexis cut the dough in thirds and stretched each piece into a round.  We blind baked the dough for 10 minutes at 475°, adding a little olive oil and cheese to each round.

Here’s how they turned out:

I didn’t have any red sauce lying around (which is weird, because I usually have some in my pantry…), so two of the pizzas were sauce-less.  I did happen to have a jar of roasted red peppers, so I pureed those and used those on the pizza which was topped with broccoli, red onion, some Italian-style chicken sausage, and cheddar cheese.

For the other pizzas, we topped one with grilled mushrooms and onions, prosciutto, goat cheese, and then sprinkled on some fresh thyme at the end.  The other we topped with some grilled cauliflower and cherry tomatoes, then added some mixed greens tossed with a balsamic vinaigrette and some shaved pecorino romano cheese.  Delicious!

A lovely spread for a Friday night, don’t you think?

The drink came from the same philosophy as the pizza — see what’s in the fridge and freezer and figure out what you can come up with.

I had some lemonade left over from Monday night’s Vodka Lemon Fizz, some frozen strawberries, and tequila; so I decided to run with it.

For these I took 1 3/4 cups lemonade, 1/2 a bag of frozen strawberries, 1 cup white tequila, the juice of 1 lime, a squeeze of agave, and some fresh mint.  All this went into the blender, and voila: the drink is finished.  I wasn’t sure what to call this drink…  Strawberries Wild perhaps?  I can feel Jamba Juice breathing down my neck already…

Maybe I’ll just call it Friday Night Drunk, because that’s really what this pitcher resulted in for Alexis and me.

All in all the night was super fun.  KC got home from work and Carey came over to hang out too.

There was much merriment and much drinking.  Too much fun!

Alexis and I are now in San Jose for Mother’s Day.  Fancy dinner plans tonight!  Post on that later this weekend.

A Walk to Remember, A Sandwich to Forget (for now)

Last night KC and I got back on the walking bandwagon (we hadn’t walked since Monday!  Woops) and headed towards Piedmont once again.  We left a little earlier than usual, which meant that most of the shops on Piedmont were actually still open when we arrived.  This is sort of a blessing and a curse.

I made KC stop into the new patisserie on the block, La Farine French Bakery, because I’d been ogling it through the windows for the past week and a half (I have a thing for carbs, ok?).

Is there anything more wonderful than a bakery?  I don’t think so (but then again, I worship all things that arise from a yeast/flour base).

KC was nice enough to indulge me and buy me a petit pain (or mini loaf of bread for all you non-frenchies).  I proceeded to eat almost the entire thing on our walk.

Me: Remember when we went on a fitness walk and I ate a loaf of bread the entire time? (Said with my mouth full).

KC: Seriously, if you could walk around with Pop-Tarts in your pockets and not be made fun of, I bet you would.

Me: I don’t avoid doing it because I think people would make fun of me — it’s because my pockets are too small.

Yes, I love bread.  I actually make a conscious effort not to keep it in the apartment because I will eat it until I’m sick (more on that later in the post though).

On this walk, we walked all the way to the Oakland rose garden.  What?  You didn’t know Oakland had a rose garden?  I’m telling you, Oakland is a beautiful and wonderful place.  You should visit.  Or move here.

So I went to go ooh and ahh over the ducks in the pond instead.

Don’t you love Oakland?  I do.

After our walk, we stopped by Piedmont grocery (I was running out of half & half and grape tomatoes) and then headed home.

I made a happy hour combo for dinner.  Beer and mini sausage sandwiches with grilled onions and peppers.  Because, is there anything more classic together than beer and sausage?

These are really simple to make, and would actually be great for a party because they’re pretty darn cheap (and fill you up fast).

To make these, I bought a pack of Italian-style chicken sausages at TJ’s.  I cut three of the sausages on the diagonal and browned the pieces in a saute pan.  I added these to small buns which I cut in half and spread with mustard.

I then topped these with the grilled peppers and onions.  To make those, I chopped up one large yellow onion and two green bell peppers.  I sauteed these in some olive oil, with salt, pepper, and red pepper flakes (because I like these to have a little heat).  I just sauteed everything until it was softened and a little browned.  Easy right?

These little sandwiches are perfect with a cold beer, and really pack a punch flavor-wise.  They would be great for a Superbowl party.  Or a Call of Duty Modern Warfare 2 party… (which seems to happen at my apartment a lot, much to my dismay).

KC and I were starving from our walk, so by the time these hit the table we were eating them two at a time without thinking.  Before we knew it we had both eaten way too many and were lying on the couch in sausage-white bread comas.  Even though these are really delicious, I think we’ll be holding off on making them for awhile.  Or at least wait until we have a few more people to share them with.

I think I need to go compete in a swim meet now, with all that carbo-loading I did yesterday.

Or maybe I’ll just take a shower.

Guilty Pleasures

So remember how I said I had something special planned for Monday nights this month?  Well, I do.

Alexis and I are having weekly Monday cocktail dates (which I can then blog about for the Happy Hour challenge — win/win right?).

So why Monday?  Is it simply because Mondays are the day of the week most in need of a little… pick-me-up?  Well, maybe.  But not really.  Alexis and I chose Mondays because we share a guilty pleasure…

Yes, it’s out in the open.  We can’t get enough of the drama, the big hair, those Jersey accents…

I’m not ashamed.  Well, maybe I’m a little ashamed.

Maybe it’s because Alexis and I come from a big Italian family; either way — we love this show.  Anyway, we will be having weekly Jersey cocktail hour.  Because what says Happy Hour more than trashy reality TV?

That’s right, nothing.

So last night was the premiere of the show, and the premiere of our weekly cocktail hour.  I made Vodka Lemon Fizz and crostini with ricotta, mint, peas, and prosciutto:

Both of these are really easy to make, and really, really delicious.

Let’s start with the cocktail, shall we?

This is basically fizzy lemonade with vodka added (what’s not to like, right?).  To make these, I squeezed a cup of lemon juice (I think this was 5-6 lemons?), and added 1/3 cup sugar (I’d add less next time — I like my lemonade more tart) and 5 cups of sparkling water.  I then poured the mix into a tall glass over ice and added a shot of vodka and a straw.  Done and done.  Easy right?

Be careful, you can’t really taste the alcohol in these, so I’m sure it would be quite easy to knock a few back before realizing you’re already toasted.  (I love you…  Srsly.  You’re soooo pretty.)

Ok, so crostini:

To make these, I cut up a baguette, layed the slices out on a baking sheet, drizzled them with olive oil, salt and pepper, then baked them for 10 minutes at 400º.

While the crostini were in the oven, I made the topping.  For the topping, I mixed half a tub of ricotta with some salt and pepper, a squeeze of lemon, a little minced mint, and some frozen peas which I just rinsed in warm water to defrost.  This mix went onto the crostini and then was topped with a slice of prosciutto.  Literally a 15 minute dish from start to finish.

These little toasts may be low-maintenance, but let me tell you, they’re delicious!  This is a great spring appetizer, and these little babies would fit in at any party.

So there you have it: mine and Alexis’ first Monday Jersey cocktail date.  If you’d like to join us (in reality or in spirit), we’d love to have you!  (But once you’re in the family, you’re in the family for life.)

Not sure what next week will be… but let’s hope for lots of reality drama and a cocktail pairing just as delicious as this one!  Until next time…
