Pizza Party

How was your Friday night?  Fun?  Mine was F-U-N.

Alexis had made some pizza dough from scratch yesterday morning, and was nice enough to bring some over in the afternoon for our Friday happy hour.  Do-it-yourself pizza is a great way to use up whatever you have lying around in the pantry or fridge (perfect for the end of the week, yes?).

Alexis and I scrounged the fridge and came up with a game plan for our pizzas.  We decided to make three pies, so Alexis cut the dough in thirds and stretched each piece into a round.  We blind baked the dough for 10 minutes at 475°, adding a little olive oil and cheese to each round.

Here’s how they turned out:

I didn’t have any red sauce lying around (which is weird, because I usually have some in my pantry…), so two of the pizzas were sauce-less.  I did happen to have a jar of roasted red peppers, so I pureed those and used those on the pizza which was topped with broccoli, red onion, some Italian-style chicken sausage, and cheddar cheese.

For the other pizzas, we topped one with grilled mushrooms and onions, prosciutto, goat cheese, and then sprinkled on some fresh thyme at the end.  The other we topped with some grilled cauliflower and cherry tomatoes, then added some mixed greens tossed with a balsamic vinaigrette and some shaved pecorino romano cheese.  Delicious!

The drink came from the same philosophy as the pizza — see what’s in the fridge and freezer and figure out what you can come up with.

I had some lemonade left over from Monday night’s Vodka Lemon Fizz, some frozen strawberries, and tequila; so I decided to run with it.

For these I took 1 3/4 cups lemonade, 1/2 a bag of frozen strawberries, 1 cup white tequila, the juice of 1 lime, a squeeze of agave, and some fresh mint.  All this went into the blender, and voila: the drink is finished.  I wasn’t sure what to call this drink…  Strawberries Wild perhaps?  I can feel Jamba Juice breathing down my neck already…

Maybe I’ll just call it Friday Night Drunk, because that’s really what this pitcher resulted in for Alexis and me.

All in all the night was super fun.  KC got home from work and Carey came over to hang out too.

There was much merriment and much drinking.  Too much fun!

Alexis and I are now in San Jose for Mother’s Day.  Fancy dinner plans tonight!  Post on that later this weekend.
