26 Today!

Hello late mid-twenties!  KC tells me I’m now in my “late twenties,” but I believe that I’m still in my mid-twenties.  KC, on the other hand, will be 27 this year so I keep telling him he’d better start planning for retirement.  Oh the hilarity of getting older…

Last night was fairly mellow.  We were still pretty worn out from the night before, so we stayed in and watched some TV.  I had a very random dinner of snacks.  It started with toast:

English muffin toast with cream cheese, sliced cucumber and salt and pepper.  I love English muffin bread — it’s always in my freezer.  It also makes a great base for pizza toast (something you’ll no doubt see on here sometime in the future).

After the toast I was still hungry:

Cow cheese, water cracker, and tomatoes.  Always a good snack.  I realize that my night was very cheese/carb/veggie…  Oh well, hopefully I’ll have a more normal dinner tonight!

Dessert was of course:

See’s!  Thankfully, all the good pieces are gone, so the candy has finally left the building (Ah See’s, this love/hate relationship of ours…).

KC and I spent the night taking tons of pictures of all sorts of things in the apartment (oh, new toys!  So exciting).  I’ll include just a couple shots so you don’t get photo overload!

After the photos, I was still (!) hungry, so I grabbed an orange before heading off to bed.

This morning I woke up to texts, emails, and facebook birthday posts — what a wonderful way to start the day!  I just had a bowl of Kashi:

Time to get dressed — we’ve got a birthday lunch date with Michelle and Brian (I believe we’re going to Zachary’s… Not the healthiest, but your birthday only comes once a year!)  Hopefully KC and I will have time to grab coffee at Peaberry first — can’t be without coffee on my birthday!

Thanks for all the birthday wishes friends!  I think it’s going to be a great day.

French Salad

Happy Tuesday!

I made French salad for dinner tonight.  French salad?  Ummm… Brie and escargot?  No, no, no.  I guess I should explain why this is called French salad.  Once upon a time Alexis and I traveled to Paris.

Nevermind that Paris is fabulous and the food is AMAZING; we can talk about that later.  This one night, Alexis and I had dinner at a small bistro and had one of the most amazing salads ever.  That salad had roasted potatoes, bacon, goat cheese…. Oh, just YUM.  Anyway, after making our way back to the states, Alexis and I decided to try and make the salad ourselves.  We thought we’d try and make it a tad healthier too.  Enter, the new and improved French salad (California style):

Our version has spring mix (or baby romaine), roasted sweet potatoes, crispy prosciutto, goat cheese, and tomatoes.  Add red wine vinaigrette, and voila:

French salad!  C’est magnifique!  I’ve gotten tons and tons of compliments on this salad, so it’s safe to say it’s quite a crowd pleaser.

Merrr…  This camera…  Seriously, anyone out there have any tips on a new camera for me?  I’m doing research, but individual info would be helpful!

After the potatoes came out of the oven, the tomatoes went right in (because they take 2-3 hours!)

The tomatoes are for tomorrow night’s dinner — caprese piadine!  I cut up 5 Roma tomatoes and tossed them in olive oil, salt, pepper, balsamic vinegar, and crushed garlic.  I bake them at 225/250° for 2-3 hours until they’re dried out and full of flavor.  My apartment smells so good right now because these tomatoes have been baking away for 2 hours now.  KC keeps asking if we can just have the piadine tonight instead of tomorrow (even though we already ate dinner!)

After dinner I had a piece of See’s candy (the toffee square…mmmm).  Currently, KC and I are relaxing in front of the TV doing this:

Beer!  Nothing like beer and TV.  KC’s drinking MGD 64, but I’m just not that into light beer.  Getting ready to watch The Good Wife (I love that show.  If you don’t watch it yet, check it out!)

Drunken Feast

Sorry I’ve been MIA all day; KC and I both had family parties to go to which took up pretty much the whole day.

We had a lazy morning, rolling out of bed at 10:30am.  I had a giant bowl of Cheerios and a banana for breakfast.  Delish.

We then loaded up the car with our laundry (as we’re spending the weekend in San Jose at my parent’s house for Easter) and headed over to Jack London Square for (dun dun DUN!!!!  Wait for it…)

Blue Bottle!  Ahhh how I love you…  I had the New Orleans Style Iced Coffee.  Seriously, if coffee were a drug, I’d have to go to meetings because of Blue Bottle.  KC had a very beautiful (and super tasty) mocha:

We then proceeded to spend way too long at BevMo, searching for the perfect birthday gift for Braden.  We made it out of there just in time to head to Orinda where KC’s family gathering was (a baby shower for KC’s uncle).  It was past 3pm at that point and I was STARVING.  Luckily there was food at the shower so I loaded up my plate with a sandwich, some fruit salad, and some chicken salad.

I also had an unpictured sugar cookie made by Laney (KC’s sister) and some coffee.  Yum!  KC and I won the shower game (basically memory with baby equipment…. if that makes any sense).  Our prize was some Macadamia Nuts and a pineapple (the shower was Hawaiian themed, so that makes the prize less random, yes?)

After the shower, KC and I got back in the car and flew down to San Jose for Braden’s 21st birthday dinner (since he’ll be down in LA on the actual big day).  Alexis and I planned a drunken feast for Braden’s birthday dinner (fitting we thought).  The menu included Caesar salad:

Yes, I realize that this dish isn’t alcohol related.  Just give me a minute, jeez.  The main course was beer-braised sausages and potatoes from the March issue of Everyday Food.

This dish was super yummy and smelled AMAZING!  I had two helpings (!) because it was so good.

Dessert was Irish Car Bomb Cupcakes:

They looked scrumptious and everyone enjoyed them.  Here’s my dirty little secret though: I hate cake.  And frosting.  Especially chocolate.  I don’t know why, but I’ve never liked cake or frosting.  I had a tiny bite of KC’s cupcake but was just reminded of my anti-cake stance.  Oh well.

After dessert, I was given an early birthday gift (since, technically, my birthday is before Braden’s).  Guess what I got???

The Nespresso Cube!  I hadn’t asked for one, but Alexis and my mom both have a Nespresso, and they’re FABULOUS!  I’m so excited to set it all up at our apartment and have people over for lattes.

We’re now done with dinner, the grandparents have gone home, and KC and Braden are sitting at the table with me and giving me endless sh#@ about posting this blog.  They’re actually hurling pieces of the egg decorating kit at my computer.  I guess that’s my clue to sign off…?

I probably won’t be posting until late tomorrow since we have more family festivities happening for Easter.  I hope you guys all have something fun planned for tomorrow (and if you celebrate Easter, I hope the bunny treats you well!)  Ciao!

That Buzzing In My Head…

So turns out that high-pitched noise I was hearing was actually coming from our Blu-Ray player.  KC tracked it down and fixed it when he got home from work (thank goodness because I thought I might be going legitimately crazy!)  So far, our night has consisted of Greek salad and TV (CSI on demand.  Oh Detective Stokes how I’ve missed you…)  Part of the reason I love CSI (only the original one) is because I think that George Eads, who plays Nick Stokes on the show, looks like KC.

Swoon!  Anyway, back to the food.  Tonight I made Greek salad with quinoa.  Here it is before it was dressed and tossed:

Thanks to KC’s mom for my fabulous salad bowl (a Christmas gift).  I can’t imagine my life without it (since I basically make salad for dinner almost every night…)

The salad included chopped romaine, red onion, english cucumber, red bell pepper, light feta, a chicken breast, and some quinoa which I cooked in vegetable stock.  For the dressing I made a red wine vinaigrette with some minced garlic, dijon, and dried oregano.

A little side note: when I started making dinner for KC, I felt a little guilty about the fact that my cooking is not what I consider to be “boy friendly.”  (Yes, KC came home and asked me what “qwi-noah” was today.)  I cook very vegetable-heavy, healthy dishes for the most part.  I don’t buy meat other than fish and fowl (and prosciutto…), all of which I use sparingly, if at all (meat is expensive, people!).  However, I decided that I wasn’t going to change the way I cook for someone else; and if KC didn’t like what I made, he could buy and make what he wanted to eat.  Lo and behold, after many, many years of dating and almost a year into living together, KC loves my cooking and even requests my salads (and other healthy dishes) when we’ve been eating out (meaning, not so healthy) for awhile.  I guess my point is, I have a lot of girlfriends who claim to have gained weight since co-habitating with their significant other, because they’re suddenly making huge meals of meat and potatoes every night.  I’m not saying don’t eat meat and potatoes, but don’t think that because you’re living with a boy that you need to be making cheeseburgers or bacon-wrapped meatloaf every night (which I’m pretty sure would be KC’s dream).

That’s my plate, and my beer…  I love beer.  I would choose beer over pretty much any other alcoholic beverage on any given day.  (See, I told you I don’t deny myself the things I love.)  I ate this, plus a couple bites more (I think salad somehow tastes better out of the bowl, don’t you?)

After dinner I had some dark chocolate and cranberry water (seriously, I need to order more gas for my Soda Club, stat!  I hate to be without my fizzy water…)

In case you’re wondering, I don’t eat an entire chocolate bar every night.  I generally eat 2-3 pieces, which is about the size of 3 fingers — I heard this is the daily serving size for dark chocolate somewhere…  Sometimes I eat a little more, sometimes a little less.

A little tip: if you like sweets like I do, stick to one type of dessert and buy and eat only that.  Eating the same thing every day (or every week) will keep you from overeating.  Since you’ll be used to the flavor profile, you’ll be less likely to pig out and wolf down way more than you should.
