Tacolicious

Yes, it’s true, I made tacos.  Again.  Something about the sun being out and the weather getting warmer makes me crave Mexican food.  Is this so wrong?  I say no.

It’s supposedly going to rain tomorrow.  What kind of crack is the California atmosphere on?

Back to the more important kind of crack: Mexican food.  Not authentic, mind you, but healthy and delicious.

So tonight was Vegan Chickpea Tacos courtesy of Happy Herbivore.  I made these for the first time a few weeks ago; and let me tell you, I didn’t even miss the meat for a second.

Both times I made this I used the taco seasoning recipe mentioned in the post.  The chickpea recipe calls for tamari; but I didn’t have any on hand, so I just used soy sauce.  If you’re intolerant to gluten, you can find wheat-free tamari, which makes the whole dish gluten-free.

I served the tacos with some diced tomatoes, spinach, salsa, and hot sauce.

I had two tacos.  For the second one I added some Greek yogurt:

Obviously, once you add the yogurt these aren’t vegan anymore.  But I’m not vegan.  Clearly.  I mean, I’m slightly obsessed with half & half…  Anyway, Greek yogurt is a great substitute for sour cream.  Less fat, more probiotics.  Yum.

I knew these tacos were good when KC, king of all red meat, said he liked them.  Victory!

The recipe says to cook the chickpeas until they’re crunchy.  I think this is delicious if you’re going to eat them by themselves as a snack; otherwise, I like to pull them out when they’re a little soft still, because they have sort of the same consistency as ground beef.

What is going on here?  Why can I not stop snacking???  Ugh, it’s one of those nights where I want to walk around with Pop-Tarts in my pockets…

Good thing these pants don’t have pockets.

Super Late

Ok, so apologies are in order.  I’m so sorry that this post is so late; it’s been one of those weekends!  I will start at the beginning, and I won’t leave anything out.  Er… I’ll try not to!  In fact, I’m even going to make this into two separate posts so it doesn’t get too overwhelming with the amount of pictures.

So let’s start where we left off: Friday night.

KC and I did make it to Fenton’s after dinner that night.  We decided it was most economical to share a GIGANTIC dish of ice cream (3 HUGE scoops):

The flavors we chose were Butterfinger, Coffee Cookie Dream, and Chocolate Mint.  YUM!  I ate about half of the Butterfinger scoop, had a couple bites of the Coffee and I was spent.  We didn’t quite finish…

We got the rest to go, and it’s still sitting in our freezer.

Ok, so Saturday.  Saturday started like any other day.  Cheerios with a banana for breakfast:

After the caffeine I was ready and raring to go.  I grabbed KC and decided we should take a walk down Telegraph.  We wandered through the shops, and ended up at La Calaca Loca where we each had a taco (since it was lunch time by this point):

I had the chicken taco, which was good, but the chicken was a little tough.  Not as impressive as the last time I was there.  Maybe it was just an off day.

After our small lunch, we wandered back down Telegraph.  We spent some time at The East Bay Depot for Creative Reuse, which I affectionately call “The Junk Store.”  KC bought some CDs for 25¢ (the selection at the store was quite interesting).  After killing time there, we headed down the street to Remedy Coffee which opened fairly recently.

The cafe has a cool vibe, and my coffee and KC’s espresso were both good.

After (the extra) caffeine, it was time to meet up with Dan and Suzie, who were picking us up to take us to Golden Gate Park for April’s birthday BBQ.

It was a beautiful day at the park.

Unfortunately, amidst all the birthday fun I wasn’t able to take pictures of everything I ate.  I had a turkey burger…

All in all, we had a great time playing kickball and celebrating April’s 20-something year.  Nothing quite like a beautiful Saturday with good friends, right?

We gave the birthday girl a lift:

Once it started to get dark (and cold!) we headed to Durdy Nelly’s so the fun could continue.  I took some pictures there, but it was so dark none of them really turned out!  There was drinking (more done by others than myself) and dancing (even though I don’t think it’s really a dancing bar…?)  Fun fun fun.  After finishing up there, KC wanted to head to Trad’r Sam’s to meet up with a friend.  There may have been a late-night stop at Taco Bell/KFC (to which I kept singing, “I’m at the Pizza Hut.  I’m at the Taco Bell.  I’m at the combination Pizza Hut and Taco Bell.”)  We were not at Pizza Hut; but anyway, if you don’t know that song, I feel bad for you.  (No, I don’t.)  By the way, I have this strange fascination with annoying repetitive songs…  That Baskin Robbin’s commerical has been repeated endlessly in this apartment because I heard it and thought it was hilarious.  (Ice cream and cake and cake…)

Back to the point: Trad’r Sam’s serves these ridiculously huge tropical drinks — I didn’t partake, seeing as I was driving, but KC ordered a scorpion, which apparently means “Make me a drink the size of my head.  And make sure it’s pink.”  KC didn’t finish his…bowl.  Thank goodness — I think it would have ended badly for both of us if he had!

We finally decided to head home around midnight.  Once we got back to Oakland, we were all beat!  KC and I went straight to bed and Suzie crashed on the couch (after I made some pizza toast for everyone in an effort to lessen hangovers in the morning).

Sorry there was no update about this!  I was in no shape to be blogging that late.  I think if I had attempted to put something together it would have gone something like this:  “I ate today.  I’m tired.  Goodnight.”  Not exactly quality material…yes?

Sad Thursday Part 2

So continuing with the sad Thursday theme, KC and I watched The Bridge tonight. It’s really interesting, but not exactly a feel-good flick. (Not to worry, I may be unemployed, but I’m not going to go jump of the Golden Gate anytime soon.)

I made brussel sprout salad for dinner:

I concocted this salad after having something similar at Pizza Antica.  To make this, I took a bag of TJ’s brussel sprouts, trimmed them, and cut the small ones in half, the larger ones in fourths.  I tossed them in olive oil, salt and pepper and then tossed in some chopped prosciutto (3 slices).  I generally add a sliced onion to this, but I was out of onions (they all went onto the pizza last night); and seeing as driving all the way to the store for a single onion seemed silly, I decided the salad would be onion-less tonight.  Anyway, this all went into a 400° oven and baked for 12 minutes.  After the 12 minutes, I added some cubed bread (which I had tossed in olive oil, salt and pepper) to the pan and baked everything for another 13 minutes.

Once fully cooked, everything was added to the salad bowl along with 1/2 a bag of TJ’s organic spinach (I generally use spring mix or baby lettuce for this, but neither was looking fresh at TJ’s this week, so I stuck with just spinach) and 2 chopped hard-boiled eggs.  I then tossed the whole mix with some red wine vinaigrette (1 tbsp. red wine vinegar + 1 tbsp. olive oil + salt and pepper).  It’s important not to over-dress this salad, as the roasted brussel sprouts have a lot of flavor, so if you add too much dressing the whole thing just gets too heavy.

Yet another easy and delicious salad:

I had this plus cranberry water (of course!).  Oh yeah, we got our CO2 refilled last week, so the Soda Club is back in working order!  Oh fizzy water, how did I ever live without you?

Speaking of things I can’t live without…  Dessert:

This is the other dark chocolate bar I buy.  I wish it was organic, but I loooove that it’s super dark: 85% cacao; plus it’s only $1.49 at Trader Joe’s, a great deal compared to many other good-quality dark chocolate bars.

Pasta e Fagiole

Yes, you read that right; and no, it’s not English.  It’s Italiano!  It just means pasta and beans.  I know, I’m sorry it’s not something more fascinating and romantic; it’s just what I made for dinner.  If you like, you can tell people it means whatever you want (“We’re having Pasta e Fagiole for dinner!  Caviar and lobster!”)  On second thought, that might be a bit misleading.

Anyway, the soup had to cook for 2 1/2 – 3 hours so I got a bit hungry waiting for it to be done.  I had a hard-boiled egg while I waited:

Finally, at about 9:15pm the soup was ready (I guess I started it a bit late tonight, woops!)

I had this + another piece of bread.

There’s really nothing like a big bowl of soup on a cold night.  This was just what I needed after last week — lots of veggies!

The bonus of making this soup (and waiting the 2-3 hours for it to cook)?  The leftovers!

I put the big container in the fridge to eat this week, and the 4 smaller containers went into the freezer — perfect for dinner on the fly.

So you might be thinking, “Why should I wait 3 hours for this soup to cook when I can just get soup in a can?  I mean, there’s vegetables in that can too…”  Well, true, there are vegetables in that can (I mean, I think there are.  What can are we talking about exactly?).  The main thing to remember about canned soups is that they’re generally chock full of sodium (aka salt), too much of which can cause bloating in the short-term, and high blood pressure in the long term.  Also, read the ingredients on that soup: do you recognize all of them?  Maybe; maybe not (seriously, what is Maltodextrin and Modified Food Starch?  I have no idea).  The nice thing about making your own soup, or using a starter like Bean Cuisine (which contains just dried beans and spices — all of which you know and can pronounce — no salt), is that you’ll know exactly what’s in what you’re eating and you can control the amount of salt you’re consuming.

As a reference, in a similar can of Progresso soup (Lentil soup) there’s 810mg of sodium.  In one serving of Bean Cuisine, there’s less than 165mg of sodium.  Yes, you read that right: there’s 5 times the amount of sodium in one can of Progresso soup than in a serving of Bean Cuisine.

After dinner, I was back on the dark chocolate:

Little April Showers

So rainy today!

Got up this morning and had the usual for breakfast:

I wanted to have something light because my parents were coming up to take us (KC, Alexis, Carey and myself) out for a birthday lunch. Before KC and I headed out to meet up with everyone, we each grabbed a lungo shot from the new Nespresso machine:

I had a GIGANTIC lunch at House of Chicken and Waffles in Jack London Square.  I love chicken and waffles (obviously… since I picked the restaurant).  Ever since experiencing the joy of Rosco’s in college, I’ve been hooked.  I think after all that I ate yesterday, this was maybe not the best choice for lunch… I guess I’ll have to step it up workout-wise this week.

Here’s the before shot of my plate:

I ordered the “Angie’s Delight” which is (generally) a chicken breast, a waffle, and grits (I substituted smothered potatoes for the grits).  Unfortunately, the waiter claimed that the kitchen was out of chicken breasts, so I opted for the chicken strips.  KC ordered a giant plate of smothered chicken which came with a breast, so he was nice enough to give me that in exchange for some chicken strips.

I was super hungry so I felt like I ate a TON, but I didn’t even come close to finishing my plate:

After lunch, it was time for the second part of the birthday outing — Blue Bottle!

After coffee, KC and I headed out to Walnut Creek to do laundry and run errands.  Nothing too exciting to report.  Had an orange much later in the day (KC and I were stuffed most of the day from lunch).

I think my body was crying out for anything remotely healthy because of the high-calorie birthday weekend.  Too bad my super late dinner wasn’t very healthy either… leftover thai yellow curry from last night (I did make some brown rice to go with it).

And to top it all off?  I ate the ears off of this guy for dessert:

Ok, no more birthday excuses tomorrow — gotta get back to being healthy again!  I think I more than took advantage of the birthday week/weekend.

I’m beat.  All this celebrating has really taken it out of me!

Happy birthday Braden!  Hope your 21st doesn’t end like mine did!
