I hope you all are having a wonderful Easter Sunday. Mine has been full of family and FOOD!
Let’s start at the beginning. After signing off last night, I proceeded to snack on some Goldfish crackers (late night snacking is such a bad habit of mine!)
KC thinks it’s hilarious that I’m documenting everything I eat and reminds me that I need to take a picture EVERY SINGLE TIME I EAT SOMETHING. Yes, I’m aware. Thanks.
This morning we slept in and then had a traditional Easter breakfast:
Easter eggs! I love a hard-boiled egg (I eat one almost every day!) and I think it’s even better when it’s such a pretty color. These eggs turned out especially well (Alexis, Carey and Braden colored them yesterday before KC and I showed up for dinner). Their trick? They used brown eggs instead of white ones. Who’d have thought? Apparently, coloring brown eggs takes a bit longer than coloring the white ones, but in the end you’re left with sort of jewel-toned eggs. Pretty, hmm?
I also had some greek yogurt with strawberries and honey (and coffee! You probably can’t tell, but it’s in a Christmas mug. I think coffee tastes better out of a Christmas mug. Much more merry.):
A little after breakfast, everyone showed up for Easter brunch. My mom had quite a spread for the occasion:
There was pound cake, croissants, two kinds of strata (Emmenthal, bacon, and asparagus made by my mom; cheddar and sausage made by my grandma), pineapple, strawberries, and a green salad. I was still pretty full from breakfast, since it was only about an hour and a half after. This was my plate:
I tried both the stratas and had some fruit and salad (plus a mimosa! Who can pass one of those up?) When all was said and done, I finished most of my plate, but still had a few bites of strata left.
So it was time for more coffee of course! After all this, I proceeded to get a stomach ache (why???). This was a major bummer because look what was for dessert:
What is that, you ask? Let me give you a better look:
Yes, that would be my mom’s famous Mud Pie. Ice cream (this one was 1/2 cookies and cream and 1/2 mocha almond fudge), Oreos, Heath bars, chocolate syrup… Basically, heaven in dessert form. Due to my stupid stomach ache I didn’t partake in the Mud Pie fun.
After the festivities were over, my mom was nice enough to pack up some goodies for us to take home (pound cake, croissants, strawberries, whipped cream, and of course, Easter candy!) We’ve got a pretty good inventory of treats now, which we will hopefully not be diving into head-first tonight… Moderation, moderation, moderation is the mantra of this week, I think.
KC and I drove back to Oakland in the rain with our goodies and clean laundry in tow. I proceeded to have a meltdown in the car because, let’s face it, being unemployed just sucks sometimes and I just can’t always be positive about it. Luckily, KC is very understanding and assured me that I would have a job SOMEDAY… (When????) So, I stopped acting like a 5 year old and pulled myself together.
We’re back at the apartment now, just ordered some espresso pods for the new Nespresso machine! I’ve been snacking on the macadamia nuts KC and I won at the baby shower yesterday (seriously, they’re addicting). I’ve got to go scrounge around the kitchen to see what we have for dinner (though KC assures me he isn’t hungry). I think it may be a Caesar salad night. Let’s see, romaine and bread? I think I have those somewhere…
