Bourbon Blackberry Smash Cocktail

Given that it’s the middle of the week, I thought a cocktail post might be in order.  Sometimes a Wednesday night calls for this sort of thing, y’know?

This cocktail is a summery twist on the classic whiskey-ginger, and is perfect for mid-week drinking (given that it takes almost zero effort and brain cells in order to make.)  The recipe is also highly adaptable, so feel free to sub in a different berry and/or herb if you feel like it.

Bourbon Blackberry Smash

makes one cocktail

  • Bourbon
  • 2 large, ripe blackberries
  • 4 mint leaves, torn
  • Ginger beer
  • Ice
  1. In a rocks or double old-fashioned glass, muddle together the blackberries and mint leaves.
  2. Add 1.5 ounces bourbon.
  3. Fill glass with ice and top with ginger beer.

Notes and Modifications:

  1. I used Woodford Reserve, but feel free to use any whiskey or bourbon you like here.
  2. Cherries or blueberries would be a nice alternative to the blackberries, if you’ve got them on hand.  If your berries are more on the tart side, add a little sugar during the muddling step.
  3. Feel free to try basil in place of the mint.
  4. I used Cock & Bull ginger beer.  If you find the cocktail too sweet (as different types of ginger beer will add different amounts of sweetness) add a squeeze of lime.

I mean, it’s pretty much rocket science, right?  Maybe I’ll recreate this around the holidays with cooked cranberries and rosemary.  I think that might be quite a treat!

Waffles In a Pinch

Sunday morning I woke up craving waffles, but discovered that I didn’t have enough of my favorite Trader Joe’s mix to make any.  After a little internet-scoping, I came across a recipe I actually had all the ingredients for (since I don’t normally have buttermilk lying around…) and figured I’d give it a go.

Given the amount of effort this recipe takes (very little) and the common-ness (not a word) of the ingredients, I figured I’d share it with you all so you too can make waffles whenever that breakfast-carb craving strikes.

5-Minute Basic Waffles

makes 3 large/12 small

  • 2 eggs
  • 1 3/4 cup milk (I used a combo of nonfat and half and half, because that’s what I had)
  • 1/2 cup vegetable oil (you might be able to sub applesauce here to make these a little healthier)
  • 2 cups flour (I used all-purpose, but you could probably use bread flour or an all-purpose GF mix)
  • 1 tbsp white sugar (feel free to add an extra tbsp if you like your waffles on the sweeter side)
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  1. In a medium-sized bowl, whip eggs (using a whisk or hand mixer) until frothy and doubled in size.
  2. Add milk and oil, then whisk in dry ingredients just until combined (don’t overmix!)
  3. Place a large scoop of batter into your waffle maker and cook according to the manufacturer’s instructions.

waffles 1I mean, did I say easy or did I say easy?  Please note that Penny was the only one this waffle-making process wasn’t easy on.  It sure is hard being a puppy (when your owners refuse to give you any of their waffles).

*You could also mix some berries or chocolate chips into the batter to fancy these up a bit.  Get crazy.

36 Hour Ultimate Chocolate Chip Cookies

Well, my 36 hour chocolate chip cookies did, in fact, turn out; so, as promised, I’ve got the recipe for you today.  Hooray!  Chocolate on a Monday!  What could be better?

Maybe it could not be Monday?  Well, I’m not adept at the art of manipulating space and time just yet, so these cookies will have to do.

Here’s a dirty little secret for your Monday, also: I… am not super into chocolate chip cookies.  I know — I hate birthday cake (blech), I’m not big on pie, and I can take or leave a chocolate chip cookie.  I should probably be deported for being un-American.  The thing is, while I pride myself on not being a picky eater when it comes to general foods, I am suuuper picky about dessert.

So, anyway, there’s that.  Basically, I’m the worst.

Despite my “whatever” attitude towards these cookies, others have informed me that these are “the best” chocolate chip cookies, so I will take their word for it.

And even for me (the “who really cares about chocolate chip cookies, let’s just eat the dough” person), these were pretty darn good.

So dust off your Kitchenaid mixer and prep these bad boys 36 hours before you actually want to eat them.  Oh, and try not to eat all the dough out of the fridge while you’re waiting for them to “cure.”

Ultimate Chocolate Chip Cookies

36 Hour Ultimate Chocolate Chip Cookies

makes about 25 (giant) cookies

  • 2 cups minus 2 tbsp cake flour
  • 1 2/3 cups bread flour
  • 1 1/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp coarse salt (I used kosher, but sea salt would also work well)
  • 2 1/2 sticks (1 1/4 cups) room-temperature unsalted butter
  • 1 1/4 cups brown sugar (I used light brown)
  • 1 cup plus 2 tbsp sugar
  • 2 large eggs (at room temp)
  • 2 tsp vanilla extract
  • 1 1/4 pounds chocolate chips (at least 60% cacao content — I used Ghirardelli 60% bittersweet chocolate chips)
  • sea salt (I used Maldon flake salt)
  1. Combine and whisk together flours, baking soda, baking powder and salt, then set aside.
  2. In a mixer fitted with the paddle attachment, cream together butter and sugars until very light and fluffy (about 3-5 minutes).
  3. Add in eggs, one at a time, then vanilla, beating well to incorporate between each.
  4. Scrape down sides of bowl, turn mixer to low and add dry ingredients until just incorporated.  (Make sure to scrape all sides of the bowl — the bottom of the mixing bowl tends to not become as well-incorporated as the rest.)
  5. Add chocolate chips (either fold these in by hand with a spatula — it’s a workout!  Or, add these in with the mixer on low, mixing just until combined.
  6. Turn out dough onto a large sheet of plastic wrap.  Shape into a large disk, cover with wrap and refrigerate 36 – 72 hours.
  7. When you’re ready to bake, remove dough from fridge and let soften slightly.  Preheat oven to 350°.
  8. Scoop dough onto a lined baking sheet (use parchment or a Silpat), making generous golf-ball sized mounds, 6 cookies to a sheet.  Sprinkle top with sea salt and bake until golden brown and just cracking on top, 15-20 minutes.  (If you’re doing more than one sheet of cookies at a time, rotate your pans halfway through).
  9. Let cool on a wire rack.

*If you’re a crazy person like me and like less chocolate chips in your chocolate chip cookies, I would use about half the recommended amount (10oz).

Valentine's Ideas: Sweets for Your Sweet

Our First Thanksgiving — the menu

As you probably already know, KC and I are hosting Thanksgiving this year for the very first time.  We’re breaking out our wedding china, every serving dish in the joint, and opening all bottles of wine we come into contact with.  It’s my first time making a turkey, and my first time hosting this many people for dinner (there’s only 11 of us, but it still seems like a lot to me!)  I’m keeping my fingers crossed that everything goes smoothly.

With that, here’s the menu for the day, linked up to the recipes I’m planning to use:

Pre-Dinner

  • Appetizers: I bought big wedges of cheese (1, 2, 3, and some kind of herbed, soft brie-type cheese I can’t remember the name of) at Costco, which I plan to serve with cured meats, crackers, and other accoutrements.
  • Drinks: champagne, sparkling rosé, and prosecco.

Dinner

  • Roast Turkey: Because, obviously, right?  I got a 20lb organic, free-range bird, and I’m keeping things simple (no frying, smoking, what-have-you — just good ol’ roast turkey).
  • Gravy: I’ve actually made this recipe before on a couple occasions, and it’s turned out perfectly delicious every time.  So, why mess with a good thing, right?  Right.
  • Mashed Potatoes: I don’t have a standard recipe for these (I mean, do you need a recipe to make mashed potatoes?  I’m going with no.), but I bought a huge bag of russets at Costco + the 4lb pack of butter, so I think I’m good.
  • Stuffing: My sister is doing the stuffing (and, technically, I guess it’s dressing because I’m pretty sure we’re not actually stuffing the bird…)
  • Green Bean Casserole: My brother is making this, so I’m sure it will be made the traditional way (complete with Campbell’s Cream of Mushroom Soup and French’s French Fried Onions.  Although, we do draw the line at canned green beans.)
  • Salad: My sister is making this (Yes, I asked for a lot of help since it’s my first year!  Not to mention that I have some very talented cooks in my family.)
  • Cranberry Sauce: My mom is making this (from scratch!)  No cans here 🙂
  • Bread: I’m not even gonna act like we’re above these.  Because we’re not.  And they’re delicious.
  • Drinks: white wine & red wine & beer

Post-Dinner

  • Pumpkin Pie: I’ve made this pie a few times now, and it always gets rave reviews.  I’m not actually a fan of pumpkin pie, but KC is, so I like to make this as a special treat for him.
  • Chocolate Pie: My mom is making this.  She makes it every year, and despite the easy recipe, it always gets gobbled up in about 3 minutes flat.
  • Holiday Spice Cake: My sister is making the last dessert, and I think is planning on some kind of holiday cake (though I don’t know exactly what recipe she’s using because I don’t think she’s decided on one yet).
  • Drinks: coffee (gotta combat all the tryptophan!)

*Oh, and in case you’re thinking that KC is getting off scot-free, he’s in charge of getting ice, entertaining the guests before dinner, making sure people know where to get drinks, and keeping everybody out of the kitchen! 😉
