Mid-Day Drunk

Hey all!

I hope you all had a fabulous weekend.  And, if you participated in Bay to Breakers, I hope your hangover has subsided by now.

In honor of B2B, this weekend I decided to have a daytime happy hour.  Because there’s nothing like a mid-day drunk to get you through a Saturday…

Anyway, on Friday KC got off work early and we decided to walk around Lake Merritt.  Um, can you tell it’s spring yet??

Hmm maybe just a little?

Our walk was very nice.  We enjoyed the sunshine and all the lake wildlife.  I did have to make a detour to Whole Foods mid-way through our walk to grab a snack…  I get hungry, I can’t help it!

After our walk, KC and I headed to Alexis and Carey’s apartment since they live right by the lake.  We decided to head to happy hour at Adesso over on Piedmont.  There aren’t any drink specials for happy hour (I don’t think…), but they do have a buffet of free snacks set up.  Score!  I’m all about free.

The snacks were delicious with our drinks; so we hung out for awhile, and then headed home for the night.

Yesterday I threw together the mid-day happy hour and invited Alexis and Carey over to partake.

I figured I’d go with a classic brunch drink and appetizer for my pre-five o’clock boozing.  I made mimosas with fresh-squeezed orange juice and bagels with cream cheese and smoked salmon.

If you’re ever looking for an easy brunch spread, look no further than this.  This is quite possibly the easiest thing to throw together in 5 minutes or less, and completely delicious.

Alright, the appetizer.  Everything was store-bought for this.  I know, I know, I didn’t make anything myself; but sometimes it’s nice to rely on what’s ready and available.

I bought mini bagels and Trader Joes and just cut them into fourths.  I served these with cream cheese, smoked salmon, and some red onion.

If I were making this for a party, I’d probably make a dip out of the cream cheese to make it seem more homemade, and to make assembling the bagels easier.  Making the dip for this is really easy and delicious.  You mix cream cheese with some diced red onion, some fresh dill, and capers.  Serve that alongside the bagels and the smoked salmon and voila, everyone at the party is your new best friend and wants your dip recipe.  All the fame with none of the effort.

Let’s get down to business, then.  Drinks.

Mimosas are quite possibly the easiest cocktail ever invented.  Well aside from shots, I suppose.  Everything you need for mimosas is in that picture: champagne and orange juice.  Basically, combine those into a glass to taste and you’re good to go.  Couldn’t be simpler.

Watch out when you add the orange juice, as the champagne tends to want to fizz over — so add it slowly!  My tablecloth is in need of a wash because I was a little hasty in pouring the orange juice in.  Woops.

I like mimosas because a. they have bubbles, and b. you can purchase cheaper champagne than if you were drinking it straight (at least, that’s my philosophy…).

If you want to make things even easier on yourself, you can obviously use store-bought orange juice, rather than squeezing your own.  I just think fresh-squeezed is far superior to any store brand, so it’s worth the effort in my book.

If you’d like to dress up your cocktail, consider adding a slice of orange as a garnish, or even a splash of grenadine.  If you’re throwing a big brunch, consider having a champagne cocktail table where your guests can pour their own mimosas.  That’s always a fun way to liven up a party.

Go for 30: Happy Hour

Happy Friday!  Happy last day of April!  So many things to be happy about.

Alas, my birthday month is just about over.  I guess I will no longer be able to pull the, “I can do what I want.  It’s my birthday month.” anymore with KC.  Darn.

Oh well, on to bigger and better things right?  Like the new challenge!

So in case you haven’t guessed, I have decided that for the month of May I’ll be starting a happy hour at my apartment.  Unfortunately, this will not be a daily occurrence, but I think that’s the responsible thing to do for my budget (and for my liver).

So what does this mean exactly?  Well, a few times a week I will have a drink and appetizer pairing, then I’ll blog about it.  This way you guys can get some recipes and reviews on easy to make cocktails and delicious bites.  I’m not sure exactly what nights (or mornings, or afternoons) these happy hours will fall on, but I do have a special plan for Mondays this month…  More on that in a later post.

What inspired this challenge?  Well, let me tell you.  Truthfully, the food diary has been so successful on here, I wanted to stay with the same theme for this next challenge.  Also, the weather has been so nice lately (aside from the weird raininess) that all I’ve wanted to do is sit and have drinks in the sunshine!  After my homemade screwdriver and carrot/green goddess dressing success last Sunday, it hit me:  Happy Hour!

Let me tell you why I love happy hour.  Aside from the boozing, hosting a happy hour is a great (and often cheap) way to entertain friends.  You can have people bring things to share, or just whip up a dish like the one above and serve a signature cocktail with it — instant party!  Also, like I’ve said before, I don’t eat a whole lot at any one time (why I’m always leaving food on my plate…) so I love appetizers.  Little bites, big flavor — I’m in!

With the happy hour challenge I’ll be attempting to make cocktails from scratch as much as possible (so I’ll be juicing my own lemons and limes and what not).  Obviously, this is not always possible for certain drinks (um, I’m not going to be juicing my own pomegranates.  Sorry folks.), so I’ll be keeping it all natural to the extent that it’s sanely reasonable (mentally and fiscally, that is).

Ok, so you guys on board for this?  I figure with all the sunshine that’s on the horizon, not to mention Cinco de Mayo — the holiest of all May holidays, you guys would be gung-ho.

Since I won’t be doing a daily challenge this month, I won’t be posting quite as often — sorry!  If I happen to come across a recipe I think it worth sharing though, I’ll let you know — not to worry.  Also, if you guys are craving some kind of new dish to make (a new salad perhaps?), leave me a comment and I’ll do my best to work something into a post within the following week.

Alright, well today is the last day of food journal.  So sad!

Here’s breakfast:

Sadly, I got a phone call about halfway through this and my Cheerios got soggy.  I hate that!  Nothing worse than soggy cereal.  As a result, I didn’t quite finish this.

I made some coffee and got to work planning my grocery list and mine and KC’s upcoming trip to New York (can’t wait!).

My fridge was so barren today, I had no clue what to have for lunch.  My only veggies were a couple of mushrooms and some cabbage.  Not really inspiring.  I ended up digging through the pantry and found my “last resorts” on the back of the shelf.

Mac and Cheese:

I made this with some extra sharp cheddar grated in, and added some pepper (of course).  Not really what I wanted for lunch, but it hit the spot.

After lunch I showered and then headed out to grocery shop.  My fridge is now packed!  Lucky KC, he doesn’t have to shop with me this week (he hates the grocery store).

Alright, well KC’s home so we’ve got to plan something fun for tonight.

Pet Rhinoceros

Let me start by saying that I hate our upstairs neighbors.  Yes, this has absolutely nothing to do with food or with the rest of this post, but they are so loud it’s ridiculous!  I’m pretty sure they have a pet rhinoceros.

I can’t wait to move.

Ok, back to the point: food.

Cheerios for breakfast:

I actually made a smoothie for breakfast, but it was too sweet again (even though I used unsweetened almond milk this time)!  So, I threw it out.  I think I need to go back to the soy milk for my smoothies.  This whole almond milk thing just isn’t working out for me.

After breakfast I had some coffee, threw on my Lulu’s and then headed off to Bar Method for Hannah’s 1:30pm class.  Man, my body is tired.  I’ve been really working hard this week in class, and I could definitely feel it during the thigh sequence today!  By the last set, my legs were shaking like there was an earthquake.  Let’s hope this translates to “damn those jeans look good on you,” later on.

After class I had a snack I brought with me:

I know, I know, “Wow, something new and different!”  Sorry, I’m a creature of habit (and limited budget).

After my snack it was time for, dun dun DUN!

Spending time with Mason!

Mason’s nanny came to take Heather’s 3pm class, so I got to watch the little cutie for about an hour.  I haven’t seen him in 2 weeks!  Isn’t he adorable?  Cute enough to eat!

Mason and I had quite the photo shoot in studio 1 today.

After my fun with Mason, I headed back home on BART and ransacked the fridge for a snack.  I realized I didn’t have much of a lunch, and there’s not much in my fridge that’s ready to eat, so I settled on this:

Usually I’d add some veggies to this (bell pepper, tomato, sprouts, avocado), but my fridge is sorely lacking right now!

Well, hopefully dinner will be healthier and more substantial than this.

Off to get ready for a walk with KC (it sounds like he’s a dog I’m taking on a walk… that’s weird).  I guess we’ll see where our walk takes us tonight.  Maybe to Temescal Produce for some veggies??  Fun fun!

One Foot in Front of the Other

Hey all,

Long day today!

I had some of that harvest porridge I made yesterday for breakfast.  The recipe said I made 2 servings, but it’s more like 3 — it’s pretty filling!:

I know it doesn’t look that appetizing in this picture, but trust me, it’s yummy.

After breakfast I headed over to Bar Method to work the desk for a few hours.  Business there is crazy!  All the classes are full, the phone rings off the hook…  Pretty soon us desk people are going to need our own assistants!

Anyway, I grabbed a quick snack while I worked:

Yes, I cheated — that’s yesterday’s picture.  I didn’t take a shot of my egg and orange today because it was so darn busy.  Sorry!

After my shift, I ran over to The San Francisco Soup Company and grabbed a bowl of their organic smoky split pea (yum):

I managed to wolf down almost all of this before heading into the 3pm class.

I’ve been really going for it this week in class — you know, those weeks where you really push yourself while you’re exercising?  Well, let me tell you, my legs are tired!  This didn’t stop me from going for a walk with KC after he got home from work though.

I had a snack first (of course):

She promptly hopped off the couch and popped her “safety collar” off.  I’d like to rename the safety collar the “you got out of that way too easy” collar.  Really Seuss?  What a beez.

We decided to walk up to Piedmont and look at the houses.  There are some super cute houses over in Piedmont — too bad I don’t have a spare $800K lying around…  Our walk was fun and it was nice to get outside, even though it was a little chilly!

By the way, walking with a friend or your significant other is a great way to get some exercise into your day.  Not to mention, it’s kind of just a nice way to spend time with someone.

After getting home from our walk, I threw dinner together:

Grilled Steelhead trout with thyme-scented quinoa and roasted vegetables.

This is super simple to make.  I threw 1 cup of red quinoa into the rice cooker with 2 cups of water, a little sea salt, and a couple thyme sprigs, and let it do its thing.  I chopped up whatever veggies I had on hand (broccoli, bell pepper, zucchini, crimini mushrooms, and a vidalia onion), tossed it all with some olive oil, salt and pepper, and threw it into the oven at 425° for 20-25 minutes.

The fish I just sprinkled with salt and pepper and grilled it in a little olive oil.  Easy and delicious!  A well-balanced meal chock full of Omega-3’s.

After dinner, KC and I cleaned the apartment.  I know, exciting.  The nice part about having a tiny apartment is being able to clean the whole thing in under an hour.  The faster this place is clean, the happier I am.  I hate cleaning, but I sure love a clean apartment!

Alright, well I think there’s some Ben & Jerry’s calling my name from the freezer…

Farro-cious Tuesday

Hi friends!

Sorry I haven’t posted until now, it’s been a busy day!

Ok, so I left off right before dinner last night…  I ended up making Spring Couscous — a recipe from the latest issue of Everyday Food.

Here’s my dish:

It was pretty simple to make — all in one pot basically.  The recipe calls for shredded chicken from a rotisserie chicken, but seeing as I was fresh out of rotisserie chicken (er… never had one to begin with…), I just cooked a chicken breast in the oven and used that.

To make the rest of the dish, you chop 4 scallions and saute in butter (I think I’ll use olive oil instead of butter next time) over medium heat in a skillet.  Once softened, add 1 1/4 cups of water to the pan, 2 wide strips of lemon zest, salt and pepper, and bring to a boil.  Once boiling, add in 1 pound asparagus, trimmed, and cut into 1/2 inch pieces.  Return to a boil and stir in 1 cup couscous (I used whole wheat couscous) and 1/2 cup frozen peas.  Turn heat off and cover pan — leave for 7-10 minutes.  Toss this with some lemon juice and chicken, salt and pepper to taste.  (Makes 4 servings).

This dish is good, but it could have used a little flavor kick.  I think next time I may add in some red pepper flakes with the scallions at the beginning, and/or toss in some chopped basil at the end.

After dinner there was some late-night snacking:

Ok, so now we’re at this morning.  This morning I made a special breakfast for myself — I decided to make Le Pain Quotidien’s Harvest Porridge.  The recipe was in the latest issue of Self magazine, and it sounded good so I figured I’d give it a whirl.

I cut the recipe in half to make 2 servings instead of 4.  Here’s the end result:

So, to make this you put 3 cups unsweetened almond milk in a pot, along with 1 tsp. vanilla extract and 1 tbsp. raw agave sweetener.  Bring to a boil, then stir in 1/2 cup farro and 1/4 cup dried cranberries.  Let this whole mix simmer until the farro is tender and has absorbed all the almond milk (the recipe says this is 35-45 minutes — it took about an hour for me).  Spoon half the mixture into a bowl and top with 1 tbsp. chopped walnuts, 1 tbsp. chopped pecans, and a quartered strawberry.  (I didn’t have any pecans or strawberries, so I just topped it with some chopped walnuts).

I thought this was pretty darn good, and perfect for a rainy morning like today.  It’s sweet, but not too sweet, and has more of a chewy bite than oatmeal (plus it makes the kitchen smell delicious).  Farro, while a little pricey, is a great source of complex carbohydrates and has twice the protein and fiber of regular wheat.  YUM!

After breakfast I had plans of having coffee and wolfing down the couscous leftovers for lunch.  Unfortunately, I lost track of time and my half & half was spoiled (the worst!) so I was forced to head to the city sans lunch and caffeine.

I did manage to make it to Peet’s for a small coffee a little later in the day (I mean, I know where my priorities lie).  After caffeinating, I ran over to Bar Method to take the 3pm class.  I was dying during Hannah’s arabesque sequence!  Danielle’s pretzel sequence Monday + Hannah’s arabesque Tuesday = torture for my backside!  Oh well, I’ll be thanking those girls later when I put on that bikini this summer.

Once I finally made it back to Oakland I was FAMISHED!  I don’t normally go that long without eating, and I certainly don’t recommend it.  It just happened to work out today that I was booked solid with no time (and no money) to eat.

I had a snack when I got home:

The KC and I headed over to Whole Foods to return the spoiled half & half (yes, return, it wasn’t even at its expiration date yet!)  We picked up some new half & half, nonfat milk, and a special after-dinner treat.

For dinner I made tuna salad:

I’m glad I had decided on this earlier in the week — I was definitely in the mood for something quick and easy tonight.

To make this I used a bag of organic mixed greens, added some chopped veggies (bell pepper, cucumber, tomato, red onion), some minced kalamata olives, a handful of chopped walnuts, and some homemade croutons (which you’ve already seen the recipe for).  I tossed all this with a balsamic vinaigrette (I just eyeballed the amounts, but it included balsamic vinegar, olive oil, dijon mustard, salt and pepper), then topped it with some of the leftover tuna from the other night.  Easy right?  Took a whopping 15 minutes to throw together.

I usually add a chopped apple to this recipe; but seeing as it’s not apple season, I didn’t have any on hand.  I’ll use a nectarine or something once those are in season.

After dinner it was time for a special treat:

Ben & Jerry’s Half Baked frozen yogurt!  DROOL.  I pretty much never buy ice cream at the grocery store, so this was definitely a treat for us.
